Country Style Ribs
As much as I like pulled pork, sometimes a full butt is just too much meat for a family of 3. Thankfully, Costco has excellent country style ribs cut from the shoulder (as opposed to some ribs that are cut from the loin side) so the family can enjoy that smoky, porky goodness, without having to eat pulled pork for a week (which is cool sometimes, but not monthly). I got 3 and rubbed them with Dizzy Dust.
I got them on the egg at 275 with sugar maple for smoke, and let them go about 4-1/2 hours. I like the ribs to have some bite left to them, I pulled at about 185, so they weren't pull able, but were fork tender. While the pork was resting I put some leftover grilled salad on the egg to reheat gently. We served greens with the pork and salad, with Franklin's Texas style sauce on the side.

Those look great. I just had some of those on Sunday and ate the leftover for lunch yesterday. I definitely plan to put these into the rotation more often.
Next time I am going to try making pork butt burnt ends ala @SGH posted here. That was the plan on Sunday but I was recovering a bit from Saturday and a nap hit me and I woke up to fully cooked country ribs.Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
It all looks great but those veggies are looking really good for leftovers. What were they? Looks like Carrot, Corn and cabbage?Large and Mini BGE

Thanks all! @aukerns08 - you're close, except the orange chunks are yams. I used this recipe: https://www.wegmans.com/webapp/wcs/stores/servlet/ProductDisplay?storeId=10052&catalogId=10002&langId=-1&partNumber=RECIPE_20169

Ah, yams probably is a little tastier than carrots. Thanks I'll have to give that a try.Large and Mini BGE

One of my favorites!! Did burnt ends out of these before and my son now calls it "Meat Candy".

Damn those look good! I don't think I've seen these in our Costco - I'll have to keep a look out for them."I've made a note never to piss you two off." - Stike

Beautiful! I make pork burnt ends out of them sometimes. Less fat than belly donut speeds up the cook quite a bit. Great stuff.
