Country Style Ribs

As much as I like pulled pork, sometimes a full butt is just too much meat for a family of 3. Thankfully, Costco has excellent country style ribs cut from the shoulder (as opposed to some ribs that are cut from the loin side) so the family can enjoy that smoky, porky goodness, without having to eat pulled pork for a week (which is cool sometimes, but not monthly).  I got 3 and rubbed them with Dizzy Dust.

I got them on the egg at 275 with sugar maple for smoke, and let them go about 4-1/2 hours.  I like the ribs to have some bite left to them, I pulled at about 185, so they weren't pull able, but were fork tender.  While the pork was resting I put some leftover grilled salad on the egg to reheat gently.  We served greens with the pork and salad, with Franklin's Texas style sauce on the side.
