    You should be able to play that concert tuba Jason. It's the same as a trumpet.

    Prepping for the annual low temp high-heat habanero smoke down:

    Gloves for sure for the de-stem and split prior to the main event.

    What temp do you do them? I usually just dry my chilli harvest in a low oven, but some smoked would be interesting.

    @Eoin - I have had (now jinxed) great success running in the 160-200*F range on the dome w/o a controller.  I use small pieces of lump, build a pyramid shaped pile just above the fire box, light in one spot and it runs just fine.  If I had a piece of protein I wanted to cook and worried about the temp control it wouldn't work... I will send you a PM with more info.

    Brisket off the egg and resting before it gets packed up for travel. Taking it to a family reunion tonight. It's done, but after cooking a SRF brisket last weekend, I can tell the difference in feel.

    For the crowd tonight, it will be fine.

    @DMW- Gotta love the loosey goosey jiggle when you get to the finish-line.  The drop test movement is quite entertaining.  Congrats on the cook.  Any good cut of brisket cooked right will yield great results.  (Better than prime rib ;) )  I know you nailed it and the lucky consumers will enjoy a true banquet.  Enjoy the evening.

    Have a plus one enroute that's evacuating her home that's in a low-lying area. Naturally I added some handmade brats to the MM protein real estate.  Amazing how much can be crammed in a MM. Pouring rain and wind gusting and she's holding steady.

    @NPHuskerFL - Stay safe.  I can't imagine the traffic today.  I left SE Georgia (Kings Bay submarine base-just over the line from J'ville in SE GA) yesterday at 5 AM.  3 lanes of wall-to-wall cars going north on I-95 at that time.  Cheered when we hit the posted minimum speed of 45 mph-and that wasn't often.  
    Every rest stop was full (Full as in all the parking spots and available grass areas were covered with cars-several portapotty's also ready).  Same for the first two areas on I-26 W in SC.  People are taking this seriously and that is a good thing.
