You sub-contract?? ;)   Great set-up right there.  For the $$ you will be hard pressed to do better than the PBC.  Talk about "fire and forget".  Their on line recipes are good but I find that my cook times with it routinely run longer than they mention.  Above all, enjoy the groceries-that's what its all about.

No worries with hitting that target.  You may need to pull reveille around 2-3 AM for the FTC or to dial the temp.  Enjoy the cook and AM groceries.
Last one I did was 8.5 pounds and took all of 14 hours after a temp bump to 275 for the last 4 hours. Hoping this one follows that same time.

@ColtsFan -  share some pearls of wisdom after your knowledge session.  As a parent of two millennials, one has got it all together and doing extremely well.  The other (almost 26 yrs old) is deep into the millennial branded life-style.  I keep hoping the great transformational moment of accepting responsibility is gonna happen soon but all indicators are that it won't.  The challenges...
Ugh, entitled millennials with no clue.  I wonder if I irritated/angered those around me as much when I was their age?

@JohnInCarolina - Dang, great eats await.  Reads like around 12-13 hrs for a 15 lb SRF Gold.  Care to share the dome temp...?  Remember May 28th is National Brisket Day- you may have just shot your wad!  =)

Well, long day on the diamond. Lost two games, but damn we played well. Played 8 innings total. Had 24 outs with only one strike out.  Pretty impressive.

@Ozzie_Isaac -  I don't know about you but once I headed off to college there was no looking back.  Leroy "Satchel" Paige to the rescue, "Don't look back, somethin' may be gainin' on ya" was and still is my philosophy.   Unfortunately the forward vision is becoming a bit more challenged with the accumulated laps of the sun.  But you can't change anything in the rear-view mirror so press on.
We were all irritating at that age-just the environment has and always will be a moving target, one to which we can't relate.  So, more rocket fuel.

Just got home from a week in CA.
Day 1 - arrive with friends with 2 girls ages 2,4,6 on a nonstop from Philly and a head cold in full swing.
Day 2 - wife drove 2 hrs while I slept to a friends house in the dessert.  98F. Why people live there I do not know. House was something out of the movies and insanely over the top with everything. Only after searching online did I see they paid > 2M.
Day 3 - Hollywood Blvd, Rodeo drive, and Beverly Hills to check out the cars.
Day 4 - Disneyland. I will leave that there...
Day 5 -  Head cold 75% gone, Sequoia National Park. I knew General Sherman was a big tree, but wow!
Day 6 - head cold gone just in time. Napa wine tour, and since we had a driver, I drank a lot of grapes.
Day 7 - drove to San Fran and did Alcatraz. What a great tour!
    Today - got home.

Just honing my skills. William Holden a SRF gold for that date. This was a Swift packer. Actually it was better than I expected. Pulled at 191 as the majority of the flat surrendered. Counter rested for an hour then FTC for 2 more. Flat was very tender and not too dry.The point was just ridiculous. This was my best effort yet.

I did borrow money from him once, but paid him back in full as soon as I could.

When you owe people, they feel like they can tell you how to live your life.

I will say, they paid my housing while in college.  I had two jobs too.  I made the mistake of buying a motorcycle with my "extra" money during my junior year.  That ended my subsidized housing immediately.  I learned my lesson.  Don't borrow and don't rely on help for others.

Just finished a triple batch of pepper stout beef.   12lbs of Chuck roast.  3 Guinness extra stouts,  plenty of pepper and garlic and red onion.  Oh yeah jalapeños as well.

Now on to an overnight L&S. Two 10 lb pork shoulders. I am feeding 50 tomorrow.  My nephew is turning 1. My SIL asked if I wanted to cook.
