Most recent Sourdough Bread. First was a 80% hydration Marbled Sourdough Rye w/ caraway seeds. Not to shabby for my first try. Thanks for suggesting I bake this Michael @DoubleEgger
The second is leftover white sourdough with caraway seeds.

Man Blake, you are killing the bread recently. Between you and Grim, you guys should run some kind of a bread clinic eggfest. Nicely done.
Also glad to see you are back at work lately.

@NPHuskerFL That's awesome buddy. You have singlehandedly made me want to bake bread. What are some good resources to read?
-
@DoubleEgger to be honest I haven't read a whole lot except historical stuff about sourdough. And friends that do sourdough themselves.LBGE 2013 & MM 2014Die Hard HUSKER & BRONCO FANFlying Low & Slow in "Da Burg" FL

Finally got everything ripped down ceiling, walls, appliances, cabinets, gone. Electrician, and plumber next. Then meeting with foam insulation guy today. Cabinets have arrived. My Beautifu Wife is doing well with this, obviously, or I would be dead.
Plaster walls weigh about 10 lbs./sq ft. Due to lead and asbestos, I had to seal the room entirely, and bag everything, prior to throwing in a 5 ton dumpster we rented. I am going to replace the interior with drywall. And will use a bamboo floating floor, to further seal down a layer of asbestos already inert due to a full layer of existing flooring. The amazing thing; I did not find, in a house this old, any wood rot, any damage from bugs, any cracked or broken beams or studs. I saw some square nails, still holding her together. This home was buit well.

The black cherry smells wonderful.
A little warm, but the Tilley and Spotted Cow are taking care of that. She cycles through about 30 deg temp swings, 220s to 250s with dial set at 232. Got 2 slabs of spares, wangs, and turds on now.

Looks like a true banquet. How were the ribs and the wings look like a very crisp skin-have to resort to any tricks to achieve that?

As for the ribs, they were the best I have ever put on the table. Between Nick's Berkshire, and this cooker, I have reached the top of the mountain.BrandonQuad Cities
