    Yeah, I think my problem was I didn't roast them enough.
    It seems to much, but trick is to get skin blistered and black.  You also don't need to get 100% of the skin off.

    Roasted the peppers over the gas burners on the stove. Roasting and peeling 4 pablano and 4 anaheim peppers took forever. Here there are stuffed with Monterrey Jack cheese.


    Here's the first one frying. I used beef tallow I rendered from fat I trimmed from short ribs a few weeks ago.


    There wasn't enough oil, and I got it too hot. I didn't have any more tallow, so I added Canola oil to cool it down and fill it more.

    Here they are.

    This was my first time doing these, and probably my last. They were good, but man that's a lot of work. Next time I want some, we'll just go out to eat.
    Love the Pablano pepper and Rellenos are one of my favorites. Man I hate that was a one and done for you....but I get it.

    I told a bunch of kids over that everything is better on the egg.  They asked about candy.  So an experiment was in order :)

    They were better, but you had to be careful.  I popped one in right off the grill.  Bad idea.  It was like sticky napalm.

    My oldest son wanted to learn how to "egg" so last night he did it all from start to finish with my instruction. (Now he wants to buy a grill - might start him off with a weber kettle)

    FYI - he is posing with the Thermapen.  We did not probe the leg.  Thought i should point that out.  




    My second oldest wanted to make mashed potatoes.  He cut, boiled, and whipped.

    Bucket list trip started today, 10 days in Hawaii (Maui) with wife and kids. I've had the trip on layaway for 2 years cause it's so darn expensive.....this was first meal of trip today after arriving late last night. Wahoo fish tacos with all the toppings. Hell yes.
