Yesterday I got the trees trimmed away from the roof, gutters cleaned, finished raking the yards and fertilizer down.  Taking it easy today, and supposed to get snow/rain and wind the rest of the week.  Happy about the timing!

Had to throw my first butt away ever. Fire went out last night. Woke this morning and the Jr. was at 100°ish and the butt was at 100°. When in doubt, throw it out.
That sucks Matt. Red heads can be hard to handle.

I still haven't gotten over it. I should have checked on it sooner, but had some other complications and wanted to keep the peace.

I'll be ordering an adapter for my Party Q (assuming they make one) so this will not happen.

I'll bet the fire grate got clogged. The Jr has the worst fire grate I've seen. I upgraded to a High-Que recently and it's much better.

I'll get one of those too. Thing cooked the hell out of the chicken, burgers,  and steaks last night.

Trying to nail the soccarat-but I'm getting some heat from the consumers.  It is a mixed-bag cook, chix, sausage, shrimp and a few scallops.  Samples are pretty good.   No patience ;)

Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

Best brisket I ever made. Choice angus from RD. Cut like half the flat off and made burgers. Rest was fork tender. The pic is weird but you can see even at a quarter inch thick plus it was just flopping over.

Woke up this morning to a gas burner being ignited ... that on, then off, then on, then off again sound.  Turns out we were being buzzed by these:

Our car salesman recommend we go try out Portillo's for lunch while we were still in Illinois. He said we had to go try the chocolate cake. So we grabbed a hot dog, roast beef sandwich, and their famous chocolate cake. Our salesman wouldn't tell us what the secret ingredient was until we got back to the dealership and tried the cake. (I have to admit the chocolate cake was super good) He goes, "you still want to know what that secret ingredient is? - It's mayonnaise" Crazy. I'm far from a baker but never heard of such a thing. Mayonnaise and cake. I like it. (Not my picture but found a picture of their chocolate cake) Going to have to find a recipe that's based around their chocolate cake

I love Portillo's but never tried their cake; need another trip to Chi-town.

One of the recipes I made sure to get from my Mom when I left home was her "Sour Cream Chocolate Cake", it may be similar:
Cook until thick, then cool:  2 squares baking chocolate in 1/2 cup milk.
    Mix in bowl:
    3 eggs
    1.5 cup sugar
    1 cup sour cream
    1 tsp vanilla
    1 tsp red food coloring
    Add to mix:
    2 cups flour
    1 tsp soda
    1/2 tsp salt
    Add chocolate/milk mixture last
    Bake in 9x13 pan 350F 35 minutes, test w/toothpick

(you're/we're on our own for frosting, I don't have that).

    Thanks for the recipe @Hotch

If you live near Phoenix, you've got to stop by Standard Restaurant Supply in Mesa.  Here's one of the views from just inside the front door:

110,000 square feet (yep, more than thee-and-a-half foot ball fields) of cooking STUFF!  Prices were good and if they don't have it, you probably don't need it.  Cotton candy machine ... yep.  Snow cone machine ... yep.  Popcorn machine ... certainly.  Stock pot for a shrimp boil ... they start at 8 qt and go up to 160 qt.  Think a MM will fit inside the 160 qt pot.  Made a repeat visit today ... didn't have my hiking boots on last week.

Edit: Smaller stores are in Salt Lake City, UT; Lakewood, CO; Denver, CO; Albuquerque, NM; Boise, Idaho; Las Vegas, NV; Tucson, AZ.

Matts pictures always have a bad perspective and weird lighting.  I'm hoping to help him at the NCBB.  It's an outreach program out of Kentucky.  Expectations are low.
