    I've sometimes had trouble lighting the lump, with that much tailings in the Egg, FWIW.  No airflow.

    I've sometimes had trouble lighting the lump, with that much tailings in the Egg, FWIW.  No airflow.  
    Light the top, leave the lid open and that crap burns up first. Close lid, fire dives down and voila, air.

    @JohnInCarolina - hopefully in addition to the brisket you grabbed some of their jalapeno cheese grits. 
    Gotta hit Valentina's and you are soooo close to Franklin's but I'm sure the line is crazy on the weekend.
