    Just finished breaking down 4 carcasses. Deboned and salted 220 pounds of it. If this salting thing don't work, I'm gonna kill Darby ;)

    @sgh looks killer!! That is some serious work.

    I've only killed and bled them.  My ex-BIL managed hog farms in Phoenix.  Over Christmas the Mexicans all wanted whole hogs.  We'd shot them in the noggin with a .22 then hoist 'em up and bleed them.

    I spent almost 2 hours yesterday killing, skinning, gutting and hanging. Spent almost 8 hours today breaking the carcasses and deboning some of the meat. At the last minute decided to cure a crap load of it. Hand rubbing salt into that much cut meat is a pain. I did 3 different batches. On one I used a method Darby/Stike spoke about a few years ago. One of the others is simply a salt set in the shade method. The other is a wet cure. Going to test them side by side to see if there is a noticeable difference. After the cure, this meat will hang in a old school smokehouse that was built by my grandfather back in the 30's. It will smoke for 15 days, give or take a day either way depending on the outside temp and humidity.

    Tonight's dinner isn't going to suck. Steaks in the sous vide at 108 after I coated with ghee and put a small amount of holly cow on them. Gonna pan seat in the mini then move over to the MM with some oak to finish off. Aiming for 125.

    He would of helped out. But he is over sitting with my mom. She can't be left alone anymore and he helps out with her.

    1.  The game got much more exciting, BYU got a TD right before the end of the half, and it ended at 35-28!
    2.  An estimating 48,000 utardians were estimated to drive on I-15 from here to LV for the game, and then back, through a road construction project near the border with a single-lane section and estimated 10-mile delays, this could be interesting.  
    3.  According to CBS early this a.m., there were forty bowl games today; hah?

    Down in the south near the border was a mess.  We are gonna go to the casino for brunch and some gambling tomorrow.  Im sure it will be interesting, we will go the back roads.  At breakfast today it was all byu and Utah gear
