    @lousubcap Following up on this after several cooks. I gotta say Wicked Good is pretty dang good lump. It lights fast, burns hot, and lasts a long time. In my opinion, its not as clean burning as Rockwood but it’s not far off.  I had a little trouble keeping the temp down on a low and slow. It’s been great for the standard high heat    cooks. A couple of times, I let the temp get away because it heats up so fast. 

    I still think Rockwood is the overall best out there but Wicked Good isn't far behind. I understand that there are some environmental concerns about the harvesting of the wood (deforestation) . You may want to look into that   if that’s your thing.

    SV‘d a strip steak.  128 for four hours. Then super hot and super fast on the large.  

    Next time I will DX the SV.  Long time for not a great benefit. 


    Added some great store bought Chimmichurri for the win!

    Fortunately the dentist was able to squeeze me in 0930 this morning, and I hadn't mangled the bridge (like I did last time) and he was able to glue it back in, gratis!  I've got some 5-Minute Epoxy to take care of future events...
    I considered a Ribeye Smoothie, but wrapped it in foil and froze it, wept softly, and ate the cottage cheese plain.   :|

    Never herd of them.  Look like a type of boar or wild pig or warthog. Can/do you eat them?  
     They are peccarys, native to the Americas (old world pigs).  They are not related to wild boars or pigs which came from Europe (new world pigs).

    They can be eaten, and I have. They key is when skinning to avoid their musk glands.

    Haven't heard this since my folks' 8-Track player died!

    It sounds like maybe you've learned that lesson the hard way.  And I don't think I want to hear anything more about that, really.  
     Lets just say they earned their "skunk pig" slang.

    I wanted to pass along that my wife and I had a much needed date night this past Saturday. 

    We went to the movies. 

    Unfortunately, that trip to the movies resulted in us seeing Crazy Rich Asians. 

    Do yourself a favor, if you find yourself in a similar situation, get food poisoning.  It is a better alternative than sitting thru that again.
