    @DMW - your pictures are making me hungry and homesick at the same time. One of my Aunts lived in Nazareth, Pa and used to send me scrapple from her favorite butcher shop there. Usually a half pan packed with dry ice and some of her home made jelly from her garden. Ever tried molasses on scrapple?

    Im trying to find my post about LeBron going to LA.  I had a few too many, so maybe unforgettable to hit the „Post“ button.   Can’t imagine the Buffalo visited so soon.

    @SamIAm2 - I have not tried molasses on scrapple, however syrup is also common around here. I'll have to give it a try. Thanks.

    Cooked this on the XL while the wife and I went to the lake yesterday. My first briskett on my xl Egg. No smokebot. 
    Xl bge ,LG bge, two 4' crusher cone fire pits. Weber Genisis gasser and 
    Two rusty Weber kettles.

    I plan on dropping another $6M for renovations to make it ours.

    The thread was initially "sunk" yesterday and then received the true "Buffalo"  vanish sentence sometime later.  Guess the Buffalo is a World Cup fan  =)

    @jeffwit just a small backyard flock. A buff orp, a few black sexlink, Sicilian buttercups, and cuckoo marans. Just enough to have enough eyes for the predators and give me more eggs that I need.  Love the insect control they provide as a bonus. No ticks in the yard.

    That's a hobby I've been meaning to get into. Bought Ruhlman's 2 books but haven't found time to devote to it yet.

    Looks killer though. I’ll tell you, I usually do prosciutto, capicola, or salami wrapped aspragus as an app. I bet some of your thin sliced bresola around asparagus on the BGE would be awesome :)

    Thanks @DoubleEgger This one I took to the next level and distilled a cup of good red wine down to 1/3 cup and added that with the cure and other spices.  Flavor is great, and I am surprised how much I can taste the wine, but the salt is overpowering. It will be redone with the correct salt measurement next time, and I think I will be happy. But I will "suffer" through this one with some fruit and cheese. Maybe if I slice thinner, it will be better as well.

    @Sea2Ski looks beautiful.   mine came out a tad salty.  my problem was with the low humidity in the house.  I had that problem and SWMBO whining about the weird meats hanging in the kitchen, esp the pancetta which would occasionally drip fat.

    It’s inspiring. I need to get off my butt and give that a whirl. The Italian wifey loves a meat and cheese tray.
