How did the steak parm turn out? I prefer gravy over tomato sauce on a steak (hell, on almost anything!) but yours looks pretty fine.

No worries about grit... the steaks always turn out fantastic doing them caveman style, even when I leave my shirt on

The parm idea was okay, not sure I would do it again, but I am glad that I gave it a shot

Essentially you throw your meat directly on the lump....no grate. No flare up also.
