    The steaks were 1.25" thick (on sale $6.97#). Kosher Salt and coarse cracked pepper pressed into each side with a thin coat of canola. The baste and board sauce»»» one stick of unsalted butter, 1/4C cooking wine, chopped garlic, chopped rosemary, chopped thyme and chopped sage. Direct at temps ranging from 500℉-650℉ on CI grid.

    @thetrim‌ acorn and butternut squash have an excellent flavor. I try using produce etc as it is in season. Give some fall/winter squash a try. Ya may find you really like it.

    So, you don't get fountain drinks, ice at restaurants, ice at the ice huts, slushes, snow cones etc? Believe it or not most are clean. This was an extremely neglected unit that hadn't been used in at least 8 months. It was the worse one I've seen. But, when seals fail to seal it happens.

    what?? what's wrong with draught beer? noooooooooo......

     

    squash is delicious, especially with lots of butter, salt, and brown sugar.

     

    cooks illustrated has a side dishes magazine out now.  they have a butternut squash recipe that slices the squash into round circles before cooking, to give more area to carmelize.

    @nolaegghead‌ working on industrial units I see low temp warehouse freezers and coolers that have a set maintenance schedule/cleaning and when they get close to borderline out of temp there are several alarms triggered. Some of which automatically call a supervisor so they can expedite a tech on-site. Same on larger restaurants that have high $$$ in their walk ins. It simply pays for them to be proactive vs reactive.

    I'd agree and true most restaurants are pretty clean. but I still try to avoid it if possible. I have a four tap kegerator at home and I know what it takes to keep that thing clean. This video changed my view on draught beer. Lol my name is a very accurate representation of me :) One of my biggest fears it going out to eat and getting food poisoning and I end up s****ing my pants :D trying to make it back home

    @NervousDad‌ again most keep them clean. Glycol units and draft beer and soda lines occasionally have to be flushed and sanitized. That is a disgusting video. I've seen very similar jobs before. So, I clean it up and go on to the next job. But, I understand your feeling on it.

    there is a little known job that most people don't even know about...professional beer line cleaning. I've known the guy who for 33 years regularly steam flushed all the beer lines in practically every tavern in our SMSA with a population of 350k. He made a reasonable living at it. He told me early on the drawback was every tavern would give him free beer while he was cleaning and he would get home sh*tface every day he worked!
