Stuffed Chicken Breast

The wife requested stuffed chicken breast for dinner last night. So in the interest of "happy life happy wife" that is exactly what we had. Brined for 8 hours, flattened out, coated with Big Green Egg Kodiak River rub, then in the fridge for another 8 hours. Stuffed with cream cheese and various spices then tied up. Cooked raised indirect until 165 it. Overshot a little was busy getting homemade seasoned French fries and broccoli sides completed. Delicious dinner all around.

I want to try stuffed chix. From what I've read, there is no one type of cheese to use. I like cream cheese so I may try that.

@gatabites Not too many pointers that I didn't mention. The only thing I plan on doing next time is flattening the chicken out more and when I put the cream cheese mixture in I will put more just in the middle then roll and tie them up. I spread the cheese evenly on the breast and lost a lot of the cheese. Hoping to hold more in the other way.
@lkapigan I tie them up hoping to keep the cheese inside from leaking out.
@tarheelhatt I wanted a sliced picture in there also. The problem was I sliced it and then tasted. Off to the races from there. Need to slice, pic, destroy. LOL
