Stuffed chicken breast w/fresh spinach saute, mozzarella, and cheddar and salad

Really wanted to try one of the rubs @stemc33 sent.  Had a package of chicken breast so I grilled three up.  

Butterflied each breast and pounded out.  

Mixture of fresh spinach, cream cheese, garlic, mozzarella, and cheddar.  

Spread on each breast and roll up.  This wasn't the prettiest looking site, but I made do.  

Cooked around 425° raised direct for around 35-45min.  


Mixture - Saute fresh spinach in EVOO, fresh garlic, salt and pepper.  Drained liquid.  Placed this in a bowl with about half a block of cream cheese, 1/4 cup mozz, and 1/4 cup cheddar.

Simple salad - Romaine, red onion, cucumber, mozz, cheddar, and bacon.  Simple dressing cconsistedof EVOO, red wine vinegar, salt, pepper, and herbs providence.

The stuffed chicken... Dang it was good.  Breast seasoned with Whirly Bird.

    Went to the doctor today for my yearly visit/wellness check.  Well not looking good for the home team needless to say brother.  He told me the four letter dirty word, DIET... I wanted to smack him.  Lol.  

    Looks like I may be doing more lean meats and not as much of it in the future.

    Chicken looks really good.!!! Sorry to here bout the dr visit. If interested check out this site skinnytaste.com. For the last 4 months I have using variations of the recipes on the egg and list 20lbs just by watching carb intake. Really good eats.

    No joke. The stress of dieting might be worse for you than gaining a few pounds. Pick your poison. We're all gonna die of something, that's a fact.
    A guy only gets so many cheeseburgers in his lifetime. I'll take as many as I can before something stops me from eating my total amount allotted.

    Great looking meal..I know this a contentious subject but what really works for me is following a type of Atkins life style..Cut Carbs and sugar..Good luck with whatever you do..Again great cook..

    @stemc33, I cannot identify the flavor profile from the smell, it was a bit weird (well somewhat), but it was really good.  I will be using this regularly!  Thank you my friend for sending that as well as other nice treats!

    Since February/March, I have really gotten into a slump with my eating.  My little girl was born in March and well in to February we had birthing classes, etc going on, so I put the gym on hold.  Since she was born, I do not care to go back to them gym, especially after work because I want to go home to spend time with my little girl (and wife :-* of course).  So, after eating relatively clean and lifting/exercising 4-5 times a week for years, and then not doing the same, has really hit me hard.

    Yeah, I just need to get focuses.  My once diet when I lifted a lot was high protein and fiber, and minimal carbs.  Mostly good carbs.  It is time for me to buckle down.
