We pulled this one from the same book as the Vietnamese Skirt Steak Salad I posted the other day. This is the 3rd recipe we have made from this book and they have all been home runs. The book is: "Salad of the Day: 365 recipes for every day of the year". It's a Williams Sonoma Publication. Highly recommend this book. I'm too lazy to rewrite it all so I took a screen shot of the page. Hope they won't be too mad since this is a shameless plug for their book

I like that you kept the skirt rare. Lots of folks adultarate it by over cooking. Excellent job brother Tex.

it was a little more cooked than i hoped. it was eaining like crazy and I went in for a minute too long. it was still really good. we don't use cookbooks often but this one is a winnerKeepin' It Weird in The ATX FBTX -
It looks awesome brother Tex. If I'm cooking skirt for my personal consumption I will pull it in the 115 arena and let rise to a perfect 120 extra rare. I know we all have different taste preferences, but to me skirt loses it's taste and becomes bland once taken beyond rare. I know some will disagree but skirt south of rare is the only way to go. Again yours looks excellent.
