    The duck is stinky, smoky, sticky, and good. The butt is still Going. Don't expect much special here but we will see.

    Brined smoked duck on baguette with Brie, fig jam and basil from the garden. Wow! Best duck I've made to date.
    Did tfj bake the baguette? Looks mighty tasty even if she didn't :)

    It was store bought. We are catering my nieces wedding in October so she is at my sister's house doing a tasting today. 3 hrs away. She is a saint. We are also cooking for 80 at 11 am tomorrow for a kids Bday party. Burgers and dogs baby! Oh well, it will be fun anyway. i may do something fun overnight to spice it up a little. Pork or a brisket or something.

    I use the Tire Kingdom by my home and have used them for two decades. No problems. To condemn a business because of a bad experience at a location seems rather judgemental. That would be like fellow eggheads that have had horror stories from their dealer say ALL BGE dealers can suck on it!

    But, @nolaegghead‌ I understand where your coming from and definitely understand. I had a shop do a simple oil change, tire balance & rotation. Got 6 mi away and had lost 75% of my lug nuts which were custom and lockers. And to top it off they forgot to put oil back in so my engine was severely damaged (on a Jeep I owned). They made it right and the engine operated better than ever after they fixed everything. But, I never went back to this location or another one of their locations because I simply do not trust them. So, I can understand your position.

    @SGH‌ The duck in NE were stuffed full of corn and grain also (A natural wild birds :-) ). And plucked from the sky courtesy of my shotgun. :)) I never said they were gamey. Unless you call the natural oil in them gamey. I was asking do y'all buy these at RD etc and what kind of prep etc do you follow. I can of course tweak some old family recipes. I just was curious of how y'all do yours on the egg. @The Cen-Tex Smoker

    Of course it's judgmental. He had a bad experience at the representative of that company in his community. I would be judgmental too, considering it was a customer service failure at all aspects of the operation, per nola. I would expect the same about an egg dealer since many come on to this site complaining about their local dealer and wondering if they are all like that. We then point them to the mothership or another dealer with a better reputation.

    @Eggcelsior‌ like I said I totally get it. Guess I've just been happy with my experiences at the hometown location we use. That's why I prefaced it with I totally get it. I would be pissed as well trust me. ;-)

    Yeah- I've plucked my share out of the sky as well. Good but very different. Tiny legs, no fat on the breast..and the occasional #2 pellet for flavoring :))

    I brined it (salt, pink salt, sugar, water) and smoked it over apple until 145 internal. No sear. It was really really good.

    whole foods has really nice ducks. most fancy ass grocery stores will too.

    I got the umbrella if necessary and the Smokeware cap on, I will not be denied. I'm on a mission. Target has vacuum packed spareribs for $1.79 a pound in case you roll with SR like I do.
