I take it to 160-170 depending on the desired final product. 165 is a all around good number for duck.Location- Just "this side" of Biloxi, Ms.

Try 135F on the breast. I used to hate duck until I ate it medium rare.

I have cooked it that low and it's excellent. But as of late for the family I cook it down and pull the meat and smother it with sawmill gravy and biscuits. It's a real treat this way.

When we hunted duck many moons ago I believe my Mother broiled and or baked to a med rare breast. Again it's been years but, I remember duck as being a bit oily/greasy. Same on egg? The legs and thighs are good cooked hotter. On ducks, there is only red meat, and it is safe to cook MR. The breast, however method you cook it, gets tough when cooked over MR. Edible, yes, but so much better when cooked MR.

Since this is a "bored" thread, I don't see a problem with ranting.
Warning: Rant.
I'm a DIY kinda guy. To the extent that I rebuild engines, put in my own HVAC system in the house (silver soldered copper, pumped it down, charged system....). I'm not afraid of almost any job. Some things I can't do, and I solicit service providers. Case in point: I have a vibration in my wheels - rear wheels. I take my car to Tire Kingdom.
I get a quote on the phone. Rear wheel balance. I get there, they see the R19 35/265 tires and jack the price up. OK, those are tricky exotic tires compared to the normal fare. Then they tack on a run-flat charge of $5 per tire. I tell them Porsche doesn't use run-flats. These are not run-flats and I'm not paying a surcharge for them. Manager insists they are. "I had a bla bla and it had run flats". Bull-crap. I pulled a search on my phone and it's obvious Porsche doesn't use them, and I tell him check the tire. He starts saying, they're run-flats, but the customer is always right, I can take the charge off if you insist, sir. ****. You.
So I get the charge off. The "computer" adds it so they must be run-flats. In reality, the computer is programmed to fleece consumers. Fine. Dirty feeling.
So before I let them balance the rear wheels, I say, I want the lug nuts torqued with a torque wrench by hand to 98 ft-lbs. Fine the chick says.
They sit around, I sit around, nothing happening. Finally, guy goes out to my car and takes it for a spin. F-me. Do you really have to test-drive a car before you balance the wheels, or do you just want to take a fast car for a joy ride?
Anyway, sick feeling continues.
Next, guy gets back, pulls off the back wheels and puts them on the balancing machine. Gets me for the second wheel - dude, your rim is bent. Ok, I'm prepared for this. Bought a used car, had a pre-purchase inspection and was warned about a vibration that could be balancing or a bent rim.
Guy said he balance the bent wheel but it's gonna shake. Need to get fixed.
He puts the wheels back on, no torque wrench, rattatattatattat. ****. ****.
I leave, thinking he probably over-revved the engine and I need to put my Durametric on it and see (probably not, I'm just paranoid). Anyway, called up my buddy who has a metal shop. "yeah, I can straighten out your rim". Hell yeah.

Tire Kingdom balancing cost me $40.
Never want to go back there.
So I get home, take off the wheel and throw it in the back of the SUV. Go to three tire places to get the tire dismounted from the rim. First place, guy sees me in a BMW and tells me $20. WTF?! I said that's too much. Then he says $15. I didn't even reply. Got in car, drove away.
Anyway, got it off at Sears. Took them 15 minutes and said it was the toughest tire they ever encountered. $13, and that included putting the tire back on.
Got back in the SUV and headed to my buddy's shop. He said it would get ugly. It did.
He rolled it around, said damn, this thing is bent. Then he started beating the **** out of it with a sledge hammer. Measured, beat, measured, beat.
We took it to yet another tire shop, probably the 4th one I had been at.
Guy let us put it on the balancer for free. Spun it, looked good. I asked how much to put on the tire - $20 balanced. Do it. He did it.
It's like a new car. Well, it is a new used car, but the vibration at all speeds is gone and I saved $600 from not having to buy a new 19"x11" rim. And I reaffirmed my suspicions that the world is filled with ****-head mechanics. Not all of them, my brother is one, I'm just speaking from today's encounters.

Rant addendum:
So I had to take the wheel off at home, to get the rim straightened. I get my trusty Snap-on 1/2" torque wrench out check the torque on both wheels. On one side, about 10 ft-lbs under-torqued. On the other side, about 30 ft-lbs over-torqued.
Simple instructions - do it right if you want my business. Do they? No. F-them. I'm just gonna cut and paste this rant to Yelp. I should have been wiser when I read:
"Yesterday, I had a tire replaced at this location. Upon leaving, I noticed that the servicemen had gone through my glove compartment and center console in search of my wheel lock. I completely understand their actions. What I do not understand was their need to take all of the quarters that were in my cup holder. Their service was quick, but I will neither frequent nor recommend this store"
and....
"In the past when having my car serviced, I've had people go through my glove compartment and steal things, including an entire month's supply of painkillers soon after a surgery. These days I put some pretty powerful emetic pills in a bottle labeled for Vicodin and leave them in my glove compartment. When I brought my car here to get new tires, I walked across the street to the Oakwood mall instead of waiting. When I came back an hour and a half later, I was amused to hear one of the employees throwing up rather violently in the restroom. Sure enough, some of the pills had been taken from the bottle. When I pointed this out to the manager, he argued with me about it. I thought about calling the police, but I figure the guy got what was coming to him. Anyway, avoid this place if possible."

Wild duck is way different. No fat and gamey. Farm raised are all velvety and luscious. Stuffed with grain and corn and don't get to move around as much. Nola- google rim repair NOLA. I bought a Mercedes E550 a few months back with AMG rims. Same story from the tire shop but didn't get screwed. They balance it and marked the dent in the rim. Tried to sell me new different rims but these are Awesome and $1200 each. I looked for a used one but ended up finding a guy in Austin who runs a private shop on the back of a BMW Dealer lot. All he does is fix rims. It's a franchise deal. They super heat them and have a machine that works them back to within 1mm of factory spec. $140. Runs like new.
