I did one a few days back that I stuffed with sausage and bacon that was to die for. You could try that. It's a winner for sure. I would have attached the link to it here but don't know how.

Why not try cubing it and braise it mexican style in a CI skillet. Probably indirect about 375 or so. Add all the usual mexican suspects; green chillies, tomatoes  - you know the sort of thing. I'm sure Google has lots of them. You can make tacos, burritos and so on.
Smoke it and make some bean soup.
Can you be a bit more specific - tell us what you don't like.

  • Since you are a tx boy, I'll throw out my 2 fave lone star adaptations to pork butts. My fave is to do salt and pepper and then stuff it with garlic and Serrano or jalapeño peppers. I take my knife steel and poke holes in the meat. Then lube up some peppers and garlic with olive oil and shove them in the holes- there is absolutely no way to say that without sounding dirty but it's great. It totally permeates the meat with smoky peppery garlicky goodness. My other go to is to do an adobado type rub (salt, pepper, cumin,Mexican oregano, paprika, and 2 or 3 chile powders. You can buy this rub at central market if you ever shop there but it's not hard to make. I use this to make tamales but it is really good as pulled pork. I eat it on tortillas or make tortas, or Texmex carnitas (after a quick fry on a griddle) with it. It's a really nice twist on pulled pork

@HDumptyEsq‌ I like everthing... Except boiled okra! I may have to go the Mexican route.

CT - is that your El Diablo pork but recipe? I have seriously been dreaming about making it for months, but other stuff keeps getting in the way.

@texaswig‌ - @SGH 's stuffed one has also been tormenting me. I hear ya though, it's hard to work up a lather about cooking a pork butt sometimes. I only make them for work functions now, it seems.

Try some European recipes. They normally use slightly smaller cuts of the shoulder and usually involve a pan, skillet or DO, but some roasts like a German Schweinbraten is great stuff. Europeans don't typically use okra but different herbs like caraway seeds (normally in a beef goulash but you can substitute pork). If you like cabbage, you can make all sorts of cooked wraps with it - it"s a natural with pork.
Where they don't barbecue like we do and use an oven instead, you can still use the egg as an oven, with or without smoke - the Germans like light smoke, i think oak mostly.
It just depends how adventurous you are and pork is (normally) not too expensive to experiment.
Good luck. We'd be interested to follow your cooks.
