@L_S-nice work without a controller or did you just grab that pic while passing thru 200*F?BTW-even at those temps my settings are quite a bit more open than yours. Each BGE must have it's own air-flow characteristics...Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Don't know why. All of my larges are the same. I vacuum out before I go overnight. Did steaks and chops last night and added lump and wood.

Do not throw it away my friend. When i cook 20 butts or more at one time i never let the pit rise above 215. I try to keep it in the 205 zone this way you dont have to rotate meat from hot to cool zones as often and can control the texture on all of them. I dont think 5 degrees will hurt any thing at all. No one has ever complained about mine and i bet you got a winner there. Good luck and God Bless!!
