Got back late from my nephews basketball game, the ladies wanted Chinese food, I didn't...

Got take out from Wegmans, which is good. Then I wandered over to meats and picked out a really nice 1-1/2 pound choice porterhouse. Planned on that with a big salad and a nice glass of red...

It was a little chilly last night; but it smelled great down in the spider. Did the while cook down on the spider; turning and flipping every minute till the IT was 125. The dome temp was around 500 during the cook...

With something like this, Hap, how do you monitor the IT? Do you just put the Thermapen down in there or do you pull it out to check!

Baby bella's, sliced some... sauteed in some butter with salt, pepper, and garlic salt. Added a little red wine and then turned to low/medium and just let it cook down.

Quickly and with a welding glove on... Just burp, open and then in and out with the Thermapen. That's one big advantage of it being so fast
