I don't know. Yorkshire can be done in muffin pans too. I've had popovers in the States but they seem a lot less dense than Yorkshire. Count the number of eggs. "The one what eats the most puddin' gets the most meat"

I looked at some popover recipes and the ratio of eggs to cup of flour is 2 to 1. With Yorkshire it is 4-1

Yes, you use beef fat for the oil. In fact the traditional way to serve it in Britain is before the main meal smothered in the drippings. Beef used to be very expensive there.
