First time i used one, i made the mistake of loading the pig inside then lighting the coal -- of course i scorched the pig!!! But it still tasted very good!!

@Wolfpack - No comparison, with the Caja China you are really "baking" the pig- there is no direct contact between the heat source and the meat. That said, I have been cooking whole animals for 20 years, and this is in my opinion the best/easiest way to do it! No worries about flare ups or slippage on a rotisserie, and PERFECT crackling each and every time!@little steven - Yes, I do own it..manage to find an excuse to use it 2 or three times a season...as a fellow Canadian you know how short that season is!

As you said "it is just an oven" and that is the problem, the only taste is the seasoning or brining of the meat. There is no BBQ taste from direct contact with a fire. It is very impressive for parties or tailgates, but it just tastes like oven cooked pork roast!

Agreed, but inject it right and it's awesome....better crackling too than any oven cooked pork roast I've ever had!

I built a china box, but after my tenth pig, i decided there was just too much waste in a whole pig, and gave it to one of my buddies. I could get better product buying pork butts for less than half what i was paying for a whole pig, and then storing it was a problem. The head and backbone doubles the cost of the meat.
