The "Tomato Salad" looks amazing.  My grandfather god rest his soul, and I would get tomatoes out of the garden, slice them and put salt and pepper on them all the time when we would be out in the corn fields in my youth.  Put that next to a nice piece of steak and you've got a winner. Nice looking cook as always Hap.

@Griffin I picked up a 6lb flat tonight to try over the weekend again. Only this time I will start it earlier so I don't get mad at it like last week. The s&p with oak was spot on
