Can't upload pic's but I cut up a prime rib to steaks and separated out the spinallis and the ribs. Got the whole deal on at 125*. Started champagne and orange juice at 9:00 eastern and we have two left outta seven. Didn't read any stinkin' destructions and we'll see how it goes. Ain't that hard. Merry Christmas bud!

i got a small egg/ nest...can't decide if I'm gonna keep it or return and get the PolySci unit. i'll probably keep the egg and just wait a couple weeks and buy the sous vide unit anyway.

That looks damn good!
Sous vide ain't the equipment as much as the process - you can do it with a pot of water on the stove. I'm not much for babysitting - set and forget.

I bought myself the DIY PID controller for turning slow cooker into Sous Vide from Thermomart. Total cost $100.00 + 3 hours of manufacturing a waterproof box and figuring out the complex wiring and settings. I think it will work perfectly. Gratifying to get it all working properly, but If I had to do it all over again, I'd pay the 169.00 noted above which looks ready to go out of the box.
