Chicken & Jalapeno Grit Sliders

Ingredients

2 cups grits/polenta;

 

6 cups water;

 

4 jalapenos;

 

2 eggs;

 

1 cup flour;

 

1 tablespoon baking powder;

 

5 pounds boneless skinless chicken thighs;

 

1 pound American cheese;

 

Mayonnaise;

 

Chipotle peppers in adobo sauce;

 

Oil;

 

Salt;

 

Pepper;

 

Onion powder;   Garlic powder;   Paprika;  

Instructions

For the buns, begin by finely chopping 4 jalapenos & frying in oil until nice and crispy.  Add 6 cups of water and bring to a boil.  Stir in 2 cups of grits, 2 teaspoons of salt, & pepper to taste.  Cook for about 5 minutes then turn the heat off & let stand until it reaches room temperature.  Add 2 eggs, 1 tablespoon of baking powder & about 1 cup of flour & mix well.

For the burgers: grind 5 pounds of chicken thigh meat.  Sandwich portions of the meat between two sheets of plastic wrap sprayed with Pam & use a rolling pin to flatten to a uniform thickness of approximately 1/3 of an inch.  Remove the top sheet & season to taste (I used garlic powder, onion powder, sweet paprika, salt & pepper).  Place the wrap back on, flip, & season the opposite side.  Put this on a cookie sheet & into the freezer until it stiffens up a bit, remove & cut into 2 inch squares with a pizza wheel (ground chicken thigh meat is very difficult to work with otherwise, it’s very sticky & will adhere to everything).  Keep between the Pammed plastic wrap until ready to cook.

 

For the sauce: add one can of chipotle peppers in adobo sauce to a small jar of mayo, salt, pepper, & a few shots of ketchup to a food processor & spin until all the peppers are well minced & incorporated.

 

For the cheese: a good high quality white American cheese, preferably New Yorker, Clearfield, Land o’ Lakes or Boars Head.  Cut each piece into 4 equal sections.

 

To make, scoop the dough with a melon baller into a preheated cast iron pan with about ¼ inch of oil.  Mash down with a fork to a nice circle.  Flip & squash down a little more.  When done remove to a cooling rack.  Cook the burgers, add the cheese, assemble the burger & top with a squirt of the chipotle mayo & enjoy with a cold beer
