Brined Salmon

Ingredients

• Brine Solution Trick (see below)
• Copper River King Salmon (or other variety)
• Seafood rub

Instructions

I used the very cool brine trick found in http://www.biggreenegg.net/archives/2002/messages/42934.htm, but added about ¼ cup brown sugar. After draining and drying the salmon, used Tom Douglas &#034Rub With Love&#034 salmon rub -- about 2 tsp per serving. I'm sure any seafood-friendly rub would be just as good.

Add soaked alder or mesquite chips to coals.
Spray grill with non-stick spray before adding salmon. Also used a bed of green onions to prevent sticking.
Cook direct at 250, about 40 minutes, or to 150-155 internal temp.
