Ingredients

• 1 lb Fresh salmon fillets (2 half-pound fillets work great!)
• 1 Clove Garlic, minced
• 1 Tbs Balsamic vinegar
• 1 Tbs Honey
• 1 Cup Alder wood chips (more chips for more

Instructions

At least an hour prior to the cook (preferably 2-3 hours), mix garlic, balsamic vinegar, honey and mustard.
Brush mixture onto fillets.
Cover and refrigerate.
Soak alder chips in some water.

Get the ol' BGE up to 300.
Use grill gripper to pick up grill, and spray with non-stick spray.
Throw on wood chips.
Replace grill, and put on fillets. Brush on any leftover ingredients
Smoke for about 30 minutes, or when fillet begins to flake apart.
