Turbo time?

Any thoughts on how long for a 11lbs, bone on pork shoulder at 325/350? Appreciate any advice as I need my sleep.

    That's a big butt! Me - I would start it @ 5 or 6 am ... 275 for an hr, then bump it to 300-350 and have it finish by 3 at the latest. 9 hrs. 
    I've slow smoked and eaten so much pork, I'm legally recognized as being part swine - Chatsworth Ca.

    Approximate cooking times for pork butt/shoulder:

    225º:  2 hours a pound

    250º: 1.5 hours a pound

    275º:  1 hour per pound

    350º:  30-45 mins per pound


    There is a good amount of variability between individual pieces so take all times as rough. Times assume a full sized butt - 7-10 pounds. Temps are dome.

    These times reflect commonly reported cook times from other discussions on this forum.

    What IT do those cooking times reflect. I suppose cooking to 165 IT and slicing will be different than 203 for pulling

    Yes, @SaintJohnsEgger, the times listed above are for pulled pork - so cooking to meat temp of 200 or so.

    I appreciate all the help. Put it on at 5:00 a.m. It's now 9:00 a.m. and shoulder is at 126. Been running pretty steady at 300ish. May bump it up some but still have 7 hours until folks start arriving so should be ok. Didn't mention that it's wrapped in banana leaf and then foil. Thought that might accelerate the cook some. Thanks again.

    Plenty of time left, wrap around 160 to help push it through the stall.  You can keep it wrapped up until your ready to eat for hours, better to finish early.

    Thanks again for the help. Realize that without pics it didn't happen but put it on at 4:00 a.m., took it off at 6:00 p.m. Stalled at 192 at 4:00 p.m. and said to hell with it and pulled it at 199. Really, really good pork and if you haven't tried wrapping in banana leafs I highly recommend it. Adds to the flavor and keeps it incredibly moist. You do loose the bark though.
