Prime brisket....an ongoing tale

Options
Stumbled upon a few prime grade briskets at the local Costco for the first time.  Had to grab one at 2.89 since choice here is usually around 3.99 elsewhere.  Weighed in just over 16 pounds.  Trimmed the hard fat and took the cap to about 1/4 inch. Weighed trimmings at 5.75 of a pound.  Definitely more than I'm use to seeing.  Gonna roll fat cap down around 250 starting at 1 am mtn time.  Will adjust accordingly for an 4pm Sunday dinner.
