12 hours at 250.. IT of 190 and the probe went in like buttah. The most tender, moist brisket I ever did. Even with the light S&P seasoning, it tasted great. I will order more from SRF for sure. The new 14 inch hollow blade Wusthof brisket knife worked like a charm carving it. After a 12 hour cook, I still had almost a full fire box of lump left.

Nice! I've never ordered the SRF brisket but was wondering how much better it was than Prime. I'm assuming more marbling?
Any road will take you there if you don't know where you're going.

When you ordered from SRF, how long was it in transit and what condition was the meat? (it says frozen to partially frozen)

I ordered on a Monday and requested Friday delivery. It came on Friday, in a styrofoam cooler (great to use for FTC) with dry ice. Frozen solid. Better to be lucky than good any day! Congrats on the cook, the eats and the future wallet separation events with SRF. Definitely can become habit-forming. I do find their brisket tastes better than a prime rib of beef. But then again, that eggsperiment may have been routinely clouded by adult supervisory beverages.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

I sent my dad a SRF Brisket for Christmas. He plans on smoking it on the 1st. He was pretty excited. He uses a pellet muncher and this is his first brisket. Hopefully he'll enjoy as much as you. If you guys keep posting about SRF, I'm sure I'll be buying one for me real soon.Steven
