Hey Tj I have only done a couple of Choice Brisket Flats and I am thinking of doing a SRF for Super Bowl and I have to ask about how you sliced this, I was under the impression that you have to cut a Brisket against the grain and I can't tell by your pics if you did?Charlotte, Michigan XL BGE

It was fantastic. I just looked at the pic I posted and I think I see why the questions about slicing across the grain. In the picture, the grain is running L to R. That slice was made from top to bottom. The orientation of the knife is not how it was sliced, I just wanted end in the since I just got it for Christmas. This was the narrow tip of the flat, which curved away from the main section. The grain curved with it, which is why I went top to bottom. As I made the turn, I started cutting across. Not sure every slice was against the grain, but for the most part I think so.__________________________________________It's not a science, it's an art. And it's flawed.- Camp Hill, PA
