Went to my first eggtoberfest w/ my wife yesterday and had an awesome experience! Unfortunately, we left before the winners of the recipe contest were announced. Anyone know who ended up winning the contest or whether it will be posted on the BGE site?
I sampled a ridiculous number of cooks yesterday and not a single one was bad, so I'm curious to see who officially came out on top.

We took second for our Just Da Tip Roll. I don't remember what the 3rd place was, but the 1st place cooked a black beans and rice dish.

Congrats, Craig (and MeatChurch).
That's "epic" enough in my book. =D>

Of course there were some glitches. Not being able to run a generator, rendering 6 rice cookers useless. We had to drop back and punt, but I think we pulled trough!

Nice work meat/Craig! Is that mustard slathered all over the rolls?Dunedin, FL

I can vouch for the "just da tip" rolls.....really really good! Unfortunately - I didn't sample the black beans and rice - interesting choice for a dish though

I didn't have time to try it. All I know is that guy was at our tent EARLY scoping out our recipes. It definitely did not have the creativity of Just Da Tip...Big_Green_Craig said:henapple said:Black beans and rice? Isn't that a #3 at La Hacienda?
While difficult, perhaps you should try to ensure all components are homemade. Some people don't appreciate a recipe unless it's overly complex. Homemade Saracha Mayo might have put you over the top. Could even do your own fried onions the night before. Either way, congrats!

@cazzy I understand what you are saying. However, I'm not sure you could get more complex than a sushi roll. Rolling sushi is complexity to the extreme. Hand fried onions done the night before would never hold that crunch that the roll required and just wasn't feasible when planning to serve every attendee. We had two goals: Quantity and Creativity. The first goal was to continually serve food all day long, literally. There was never a moment when we didn't have something to serve. Also, I wanted to do something in a creative sense that has never been seen at any EGGtoberfest. Win or lose, the creativity shined, we never ran out of food and actually had leftovers. Our team cooked their a$$es off and achieved both goals. I could not be more proud of our effort and I wouldn't have changed a thing. Thanks for the Congrats.

@big_green_craig really? Rolling sushi is complexity to the extreme? The hardest part of th ecook is the rice. I watched a youtube video and bought a $5 bamboo roller and it took a couple tries to get it right. Especially when you cheat and put the Nori on the outside to make it easier to roll. Toasted sesame seeds don't stick very well to Nori. The roll does look like its worth a try though.

@Lit I missed your recipe entry. What was it?

@eggcelsior All three recipes were great! All the cooks did a great job. It was a great event.

@big_green_craig you have missed the recipes for the last several years since this is your first one. Here is a link to one of the test cooks that we have done at several fests. The recipe has changed since we now cook the apples off in bourbon. Not as complex as making rice and reverse searing a tri tip but maybe some day.
-
@eggcelsior Complex in more of an ambitious context. 3 or 4 rolls at home is one thing. We had 170lbs of tri tip, 160lbs of sushi rice, 600 sheets of nori, 6 rice cookers, etc. We didn't roll sushi for an hour, we rolled all day long. It wasn't easy to make sure that all components were ready or staged. At the same time, trying to cook other dishes.

@big_green_craig we have never made recipe cards. One of our team members has a website where he posts them so people can see what we did but we aren't there to compete. We get drunk and cook.

You had a 11 cooks, so volume is kind of a moot point.Big_Green_Craig said:@eggcelsior Complex in more of an ambitious context. 3 or 4 rolls at home is one thing.
