Saturday Attempt at Brats and Saurkraut

Going to do some brats and saurkraut in my DO on the egg... figuring to go the slow route and try to simmer them in the kraut with some Guinness for a while, till the IT is around 155 and then take them out and brown them before they go back into the kraut bath. Once they are back in the DO, I am going to grill up some baby reds to go with them...
Any have any tips? I will post pics in a bit...
Probably going to have the egg at 300 - 350 for the simmering part

This is the way to go, or as my DIL's German Mom says, ziss iss vhat you vhant. She likes to boil the water, remove from heat and then drop the brats in, her target temp is around 175-180 for the water until the brats are around 150-160º internal. She browns in a pan or on her gasser - low temps so not to split, the direct heat is for colour only. On the egg I use onions and Kraut with a dome of 250º - keeping the brats covered until the browning step. Interesting choice of beer, I like lagers for brats.You should never blame being a great host on your guests....[-XDelta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

Simmered them in the kraut and Guinness with butter, some celery salt, thyme and rosemary. Uncovered and the dome at about 375°... Once they looked mostly cooked, I took them out of the DO and browned them on the grid and then put them back in the DO.henapple said:Exactly How'd you cook those?

Three olives in a Martini - ask mt 8 year old granddaughter she shakes mine, and Vermouth is a highly overrated accessory.The cook looks good, love brats in beer and kraut.
