    Just a note. The clod would not fit in that pan until after many hours of cooking and shrinking. The entire fat cap had all but rendered away at the time I panned it.

    Thanks, that does help. I think if I draped it over an inverted V-Rack for awhile I could make it fit.

    Might have a cook in the next few weeks that would work for this...

    I believe you will be fine size wise on the XL. Especially if you drape or tuck it . The Teres Major is the leanest part so no harm at all if you "tuck" it to fit. It will still cook just fine.
