Spicy Asian Wings on the Mini BGE

I was bored and at home alone last weekend when my wife was out, so I got to experiment a little.  HERE IS THAT POST  I thought the Asian sauce for the chicken drums was missing something, so this time I added some Basil.  I couldn't find any Thai Basil, but I'll probably try that next time to see if it makes a difference.  I used the sauce on some wings this time.  For those of you interested, the Mini can fit exactly 10 wingettes comfortably using the indirect setup with the Mini Woo and pizza stone.  I did two batches of these the other night. 

Here is the recipe...simple, but good I think.  And you may have everything already in your fridge.

For the sauce:

5 TBSP store bought Sweet and Sour Sauce (I used La Choy brand)

2 TBSP Sriachi Sauce

1 TBSP Soy Sauce (I used Kikkoman brand)

1 TBSP Oyster Sauce (I used Hokan brand)

About 1 TBSP Fresh Basil (or however much to your liking)

 

For the Wings and/or Chicken Drums, you just dry them off with a paper towel, season with Baking Powder and a Spicy BBQ rub of your liking, and throw them into the fridge to air dry while you prep the BGE.  I cooked them indirectly at around 350-375 deg f for about an hour (or until the skin is nice and crispy).  Don't worry about overshooting the internal target temp....the wings won't dry out at all.  They will still be plenty moist when finished.  Then sauce them up and finish for about 5 or 10 more minutes.

Plated them up with some veggies.  We've been eating outside for about 3 weeks straight, since the weather has been so nice in SC.

This was my lunch the next day.  ;)  My coworkers were jealous and it gave them a craving for wings, so they went out for wings for lunch.  So I had to eat by myself.  :D

I think I'll be making these to go along with the Jalamango Lime Wings for the Hiawassee Eggfest.  Figured the prep work will be easier if I'm only doing wings, and I can prep them all the night before.  For those of y'all who are coming, can't wait to meet you there!
