I dunno what it is. Is there a lot of gas? My best guess would still be yeast. There are many natural strains of yeast that are extremely salt and acid tolerant. But yeast doesn’t consume complex car…0 · -

Lactobacillus don’t produce any gas, but I’m sure there are some yeast in there that do. Although there isn’t much in the way of sugar for them to chow down on.0 · -
