Tri Tip Enchiladas with Roasted Tomatillo Salsa

I've made and posted this before and gotten a good response so I decided to document tonight's cook in my usual fashion, with photos!



We start out with a roasted tomatillo salsa from Rick Bayless.







Then make a tri tip. You know the drill. Dice it up.



Now, slice up a yellow onion, cook it in a cast iron pan with som EVOO, add in two tbsp diced chipotle and 1/2 cup beef broth.



Mix in shredded cheese, the onion/chipotle sauce and the diced tri tip.


Heat up some tortillas to soften them fill with the mixture, wrap tightly, and place back in the cast iron pan with a little heavy cream and more cheese.


Now make like Snoop Dogg and roll that up tight.
