    How long per side? I did a ribeye last week for 30 seconds each side after indirect IT of 125 and it was righteous. Never have done one strictly caveman.

    Regarding time per side, I went about 90 seconds per flip and hit each side twice so about  3 minutes total per side.  Hi speed instant read thermo for the win.  Thin cuts are great for the full caveman.  For anything greater than a good inch thick the reverse sear and cavemen finish (as you did) achieves the crust.
