SRF black thin flat iron-perfect thickness for the cook:
Side one on the lump:

And the flip:

Getting dark and crusty. Meteorite.

And the required $$$ shot:

Yes, the crust is what makes any caveman finish worth the challenge.
Go for it!

Great cook and post. I love doing this when I am hosting folks I don't know very well. It livens up the conversation.

Also fun to demonstrate for uninitiated guests.dbCooper said:Looks just great! On the fun factor scale, this is my #1 for the Egg.That crust is a thing to behold, Frank!! -
How long per side? I did a ribeye last week for 30 seconds each side after indirect IT of 125 and it was righteous. Never have done one strictly caveman.

Regarding time per side, I went about 90 seconds per flip and hit each side twice so about 3 minutes total per side. Hi speed instant read thermo for the win. Thin cuts are great for the full caveman. For anything greater than a good inch thick the reverse sear and cavemen finish (as you did) achieves the crust.BigreenGreg said:How long per side? Love it! It’s funny…when I do events and do some caveman searing, I always ask the crowd, “Remember the days when you accidentally dropped some of your food on the coals and had to throw it away? Now watch this…”! 🔥🔥🔥🔥Craig aka Cmac Cooks
