Picanha cook with caveman finish non steak version: (sides an option...)
Reverse sear to around 125*F-
Into the fire aka caveman finish: Yep both sides (fat side quite a short exposure)
And the $$ shot:
What a great flavour (nod) and texture. I don't cook this cut nearly enough.

@GrateEggspectations Love your simple and healthy meal. Your foiled pan got my attention. We live dangerously and cook on teflonised foil occasionally. Food in contact with teflon (or whatever) vs. aluminum, pick your poison 😂
Here's our wings from last night, I didn't expect total lack of caramelised crust on the foil, maybe because wings were not dripping with marinade.

I put a small amount of ‘burger sauce’ from a squeezy store bought bottle under the patty. I don’t typically use a lot of sauce on burgers though.Perth, Western Australia -

Based on the above close to mid-week banquets I figure it's once again time to remind that these top shelf groceries deserve standalone thread recognition.

NYT App had a highly rated butter chicken recipe, the Indian restaurants around here suck, so I thought "Why not."
Reached out to @caliking for some advice and went for it. Already had a bag of Indian type basmati so I settled on Jeera rice, and a khachumbar salad with store bought naan for sides.Highly recommend that recipe.

Just search Butter Chicken on the NYT app. The rice came from https://urbanfarmie.com/jeera-rice/, and the salad came from https://www.indianhealthyrecipes.com/kachumber/GrateEggspectations said:

One of my favorites for dinner last night. 40 clove chicken with thyme, vermouth and pinot grigio. Final sauce was reduced and thickened with heavy cream. Don’t have an after plated pic but I will try and remember to get one at lunch as there are a ton of leftovers.
