Had some corn tortillas and some leftover salsa - made chilaquiles for breakfast. Egg or avocado would have been perfect, but used what we had

Been a few years since I’ve done these. Honestly, I think they’re too heavy for an appetizer. 3 of them and you got yourself a full fledged meal. Delicious though.

The key to cleaning before loading is to cook the sliced peppers at around 250*f +/- for around and hour. @lousubcap agreed on the Texas twinkies being amazing. I use a grapefruit spoon the clean jalapeños. Never takes too long. But I suppose we need to run a poll to see how many folks have grapefruit spoons… might be a weird Florida native thing.

footnote - I substitute Caribe peppers for jalapenos occasionally in recipes if I want more than a grass flavor provided by the Texas A&M Jalapenos.I would rather light a candle than curse your darkness.

Easy peasy, including preheat time, thighs were done in baby pellet pooper at 400F under 30 minutes; garden salad was ready to eat; the induction range boiled water almost instantly for the corn and dried pasta. The photo was taken with a new low-end Samsung in 'food' mode.

Wife ran off to the casino with her sister this morning, so I figured a big hunk of beef was in order. Not on the Egg (I know, sacrilege), but I've been slammed with things I wanted to get done this weekend so opted to fire up the gasser. Ate well regardless!!! Nice bone-in Ribeye about 27oz.
