Favorite use for pork butt leftovers?

I did a 1/2 a pork butt (one cheek
) today. There are just the two of us at Casa Teefus so we have a bunch left over. What are your favorite uses for leftover pulled pork? We’ll be doing tacos one night, but would like to hear what other Eggers like.

Should time and equipment allow, I would advocate for vac sealing and freezing. So easy to reheat (sous vide works great for this) at a moment’s notice. Buy buns and a salad and you’re ready for a party.Highlights for us have been pulled pork eggs Benedict (first enjoyed at a restaurant in Washington, D.C. before recreating at home) and pulled pork nachos.

You can add it to Mac and cheese. Or I have a recipe for pulled pork chili in one of my cook books.

brunswick stew — freeze some stew in quarts or whatever for an easy one pot winter meal for 2. smoke a couple turkey legs to add in you want.

Simple here-roll into breakfast scrambled eggs, enhanced with chopped jalas, mexican cheese and then load into tortillas. Way to kick start your day, every day!Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

Great suggestions. Tacos and Breakfast meat have been my regular "Go To" options, but the Eggs Benedict sounds awesome. The Mac and Cheese sounds like a good option too. I wish I had a vac seal system, but just rely on freezer bags.Michiana, South of the border.

always fall back on the standard abt with pulled pork. pork, baked hot peppers and bacon makes a great grilled cheese, or parmesian crust the jalapenos onto the grill cheese like this

Carnitas for us. Throw it in a large skillet with a little oil, peppers, onions, and seasonings. Always a winner. I've made asian lettuce wraps as well with leftover pulled pork.

Pulled pork is the omnimeat... so good in just about any variation/version you can come up with.
Besides what has already been mentioned - Ramen. Empanadas. Bao/buns. Pot pie. Pasta sauce. Chili. Fried rice. Egg rolls.

Gochujang pulled pork Korean pizza.
Base sauce: gochujang, tomato paste, rice vinegar
Toppings: leftover pulled pork, mozz, pineapple, red onion
Garnish: cilantro
Sauce for drizzling and dipping: kimchi mayo
