It was a three-hour culinary amusement park ride.  They even brought us down into the kitchen to have that cocktail (a Spanish Negroni) and the paella.  It was incredible.

Better to be lucky than good right there.  How many on the ride?

Did you head straight to Portillo's after, or was there enough food?

Haha.  More than enough.  We were both pretty full by the end of the night.

Bill Dance is the OG Legend
  • Pretty posh, @JohnInCarolina!

Some of the plating there is pretty creative.

How was the tour of the kitchen? I think I would have been as excited for that as I would have been for the tasting.
  • @JohnInCarolina your photos remind of a place we have eaten in Mexico.  If anyone is in Playa Del Carmen, I highly recommend trying to eat here.  https://www.karismahotels.com/lechique  It's called Le Chique.

The kitchen was super cool.  Lots of people putting final details on various dishes, and yet somehow strangely calm.  I was kind of disappointed I didn’t hear anyone say “yes chef!”

    That place looks great!

Alinea is a three Michelin star restaurant.  Apparently the bar for being at that level is that it’s a restaurant worth traveling to from another country.

Was it in “The Bear” where the restaurant where Richie stages where staff speaks to one another as little as possible? Don’t know if that was only the front of house, or kitchen staff too. Both, I think, given that diners got to visit the kitchen.

And this despite his healthy diet. From Google:

”In his wrestling days, Hogan ate the diet you would expect from a larger-than-life character. Back then, breakfast consisted of a dozen fried eggs and hamburger slathered in butter. His pre match meal was 3 beers and 2 Tylenol, followed by a dozen beers after the match.”

The two Tylenol kind of stand out to me for his size, for his profession to be roughly equivalent to popping a couple of tic tacs.

That's the Diet Coke with the three meat plate of bbq and banana pudding.
THANK YOU FOR YOUR ATTENTION TO THIS MATTER
