Pulled pork char siu bao

Had some pulled pork left from a buttlet I smoked last weekend…



Chopped up some of the PP, added toban djian, scallions, five spice, hoisin, oyster sauce, and some other stuff, to make the bao.

The sample (although asymmetrically filled) was pretty tasty 🤤

Thanks, all.Tried a recipe that called for cake flour, since I had some that needed to be used up. I liked the texture, but the clan says they like the more bready type of bao. Back to the AP + cornstarch version they've liked before.A stash of pulled pork in the freezer is like a blank slate to play with. So many options

@MaskedMarvel, @GrateEggspectations - this is the recipe I started with:I used cake flour, but will go back to a recipe that calls for APF + cornstarch (about 20%). My last attempt at bao was this recipe, and turned out well.For the filling, I went with what sounded good... 2 cups of chopped up PP. Dash of oyster, hoisin, toban djian, light soy, dark soy sauces. Ginger, scallions. Briefly sauteed all of this in 1 TBSP of sesame oil. The salt in the ingredients adds up, so I may leave some out next time.

same recipe , but used APF 240g, cornstarch 60g , and water 150ml. Could probably add water up to 55%.Texture was much better.better.
