Tacos: Manitas de Cerdo (Pigs Trotters), De Tuétano (Bone Marrow), and De Camarone (Shrimp)

Made up some fun tacos this weekend.
Pig Trotter Tacos - blanch pigs feet, then cover in liquid and cook with onions and carrots for ~5hrs. De-meat the trotters, toss the bones (there are a ton of bones in pigs feet/ankles), then roll all the meat,collagen,fat, etc in cellophane and chill. When ready to make the tacos slice thin and fry them up (we chose to fry them in pig lard). Dressed them simply with onions, green onions, garlic, fermented jalapenos, and habanero.




Made Shrimp tacos - simple green lightning shrimp minus the cilantro and add habanero. The shrimp were bought out of the back of a truck in the Carniceria parking lot around 7pm.



Also made bone marrow tacos, dressed similar to shrimp but did add in some fried figs to offset the richness.

Dad always liked to nibble on pickled pig's feet, came in a jar. Don't know that I've ever seen them lately (I could take to leave 'em).

Was a lot of fun for sure - definitely trying things outside my wheelhouse, but learning a lot too! Local carniceria said they could order pig heads. So might be trying that soon.
