    Thanks @caliking -It's the least I can do anymore.  BTW I did spend 12 years as a volunteer firefighter at the house before it transitioned to all paid staff.  Some exciting and challenging times (had to find an adrenaline fix after the Navy gig.)

    Read on the 'net recently that IHOP gets their omelettes extra-fluffy by adding 2 Tbs of their pancake batter to the eggs.  I tried that this morning, results are good!  I did the maths and figured 1.5 Tbs of Bisquick and 1 Tbs water, mixed up before adding the eggs, would do it.
    It was a bit too pan-cakey, but sure browned nice.  I realized I math'd wrong and IHOP probably makes 3-egg omelettes, I only use two.  So tomorrow I'll use 1 Tbs Bisquick and 2 tsp water.

    No pics, it was just an omelette.

    Ribs look great but that is some serious baking right there.  Feeding an army??

    We are on vacation next week.  Headed to a lake in NC.  This is for that.

    Ribs just before going on the KBQ:

    Meanwhile the wife and our youngest have been very busy baking:

    For a second, I thought the baking pic was from @ColbyLang 's bakery.  What a production facility you have going there.  Looks fantastic!  It's been a while since I think I have seen a good KBQ pic in operation.  Feel free to drop one here when rollin' smoke.  Some of us are working all weekend.

    @JohnInCarolina Ribs look great.

     If there's a peanut butter chocolate something going down in the bakery sweat shop, I'm down for it.

    Color me jealous. Fresh, tree-ripened peaches are hands-down my favorite fruit.

    @botch that is one of my favorite easy meals. I like to toss in a zucchini cut in 1inch rounds towards the end so it cooks but doesn't get mushy. I have added carrots too on occasion with good results. I add them shortly after the potatoes if they are big. If you ever go to Walmart check the frozen fish section for gator. Ours has it most of the year and it is pretty reasonably priced and a good quality.

    I have some chicken thighs. Thinking about chicken tacos with peppers and onions. I might pickle the onions. Never done that . I need either red wine vinegar or a bunch of lime juice if I remember correctly . Using Meatchurch Fajita and bottled salsa. I have a recipe for chipotle chicken but it needs time to marinate that I don’t have right now.

    +1 for pickled onions. Simple and so nice to have on hand. We often do a blend of veggies.

    The onions are pickling. I used a pickling spice blend instead of separate spices and honey instead of sugar. I like that honey never spoils.

    Poke Chop, copycat Cracker Barrel hashbrown casserole, and copycat Ruth’s Chris creamed spinach. I have an old restaurant recipe book that I haven’t used in a long time. A bunch of the restaurants are now closed. lol.

    I have the Ruth’s sweet potato casserole and creamed spinach recipes. Both so rich, but soo good.

    Awesome plate right there
