Amongst all the chaff this PM this run up to one incredible banquet is beyond worthy but she's the best I've got: Impressive efforts and outcomes. One should be so lucky!

Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
He was all over it. His house. His gas grill. His paella, etc. I lead a team on the smoker. He does everything else.GrateEggspectations said:Kevin is on it!XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle

Thanks all for your comments. A good time was had by all who showed up. Thunderstorms at the time of the party cut attendance. We had some leftovers for many of the guests and made gallon ziplock go-bags for them to take home.

@GrateEggspectations, as I mentioned somewhere else, it is not my grill. It is a built-in Viking outdoor gas grill that was just (mostly) rebuilt - although he does keep it quite clean all the time.GrateEggspectations said:Great pics and adventures in this thread. Colour me jealous for leading/experiencing such an epic cook.Grill so clean it’s criminal:

It is a 36" paella pan that he had to special order from Spain.lousubcap said:That paella pan is sized to feed a bunch of hungry people and they have no clue as to how good it's gonna get.XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle

@Dyal_SC, not so much. The guy holding it is 6'1" or so. He uses a naan from the local Ali Baba food store and after it is cooked we slice it up into about 50 pieces and serve it as an appetizer. Even when my BBQ is a '10' (yesterday the brisket was a 8.5-9 and the ribs were 10), this quesadilla is typically the best bite of food on the day. Yesterday was no exception.Dyal_SC said:😮 @Foghorn must be holding the quesadilla close to the camera.XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle

@Dyal_SC, this is the recipe we use. The guy who usually makes it is originally from New Mexico and has his own hatch chili source, so he just gets them out of his freezer and adds them. He also adds about 1/2 cup of heavy cream per batch to the recipe as listed to make it creamier.Dyal_SC said:Need the deets on the MNC! 😮
My wife and I have made it with hatch chilis from a jar. They don't tend to have quite as much flavor as the ones my friend provides. You can titrate to taste as you get some experience with the recipe.XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle

Fan-farkin'-tabulous!!I've been out for a few days, but this thread has been on my mind. For whatever reason, I look forward to (seeing) this MNC when you do the Annual Housestaff Welcome Cook. Very awesome gesture. And, what a spread!Do they quite realize that it may be a fattening-for-slaughter sort of scenario?
