Because I can - Goat cheese and cheddar stuffed habanero, caribe, and jalapeños wrapped in bacon for dinner.
Habanero were by far the best, especially because you pop the whole thing in your mouth.

@caliking I attempted to make scallion pancakes a couple times and have gone back to just buying them in the frozen section. While I don’t like many premade versions I just can’t seem to replicate the flake and flavor.

followed the Martin Yan recipe more closely, and the pancakes were better. Not a fan of the baking powder in the recipe, though.

Did a rib combo of pork and beef ribs. I had some small racks of pork ribs and some beef ribs that I trimmed off our prime rib roast last Christmas that I pulled from the freezer.Pork ribs were rubbed with Meat Church honey hog and sauced with Kinder
Beef ribs were rubbed with Montreal seasoning. The beef ribs easily won tonight.

The wife and kids are out of town so I put everything they don't like in a pot and brought it to a boil. Would have done it on the egg, but I've always heard you can't boil water on the egg.

Got 2 racks of spare ribs going with a pan of baked beans under them. With the baked beans, I mixed in bacon, Melvin’s red bbq sauce and a big scoop of Mamaw's (my mother’s homemade) “blueberry mountain apple jam.”

Nice @Dyal_SC ! I have two racks thawing to cook tomorrow. DH has decided it is time to defrost the big freezer so it is time to get creative with the random and not so random things I have stashed away.
Was in Illinois last weekend with corn just past my ankle in a couple fields… so it might be hard for some of you to imagine our sweet corn in Texas will be ready to harvest in a couple weeks. Pulled all the old corn from the freezer, cut it off the cob and made a big batch of corn, ham, cod, and potato chowder. Will give us dinner tonight and at least 10 frozen lunches. -

Spares done hot ‘n’ fast. Its been so long since I’ve made ribs, that I forgot they take a while

Beef stroganoff last night. Velveted the Wagyu sirloin, and it turned out well. Had to hide the meat, otherwise none would have made it to the sauce.

No idea how I missed a picture on the egg. Went 3 hours unwrapped indirect at 250 and then added some more seasoning and went an hour in foil. The cook was very good. Fell off the bone with a little tug. If I changed anything I may would go 45 minutes in the foil to get a little more bite. Seasoning is a work in progress, thus the ranch.
