No waxing,etc. involved. Had some chix in the fridge, and wanted to try something new.

Marinade for the chix involved cumin, coriander, parsley, paprika, turmeric, lime juice, mayo, olive oil.



The sauce base: onions (with a pinch of baking soda), chopped tomatoes, tomato paste, oregano, parsley, cumin, coriander. Finished with some coconut milk, then dropped the grilled chix in it.


Pao de queijo FTW!


Served it all with leftover fried rice, and steamed broccoli. 

Good eats, but I could have eaten the pao de queijo for my whole meal. I've made it a couple of times before, but this really was the best version.

    Nailed that chicken, as is your style. Apparently, Pao de queijo is often eaten for breakfast, so have at it with any leftovers (doubtful)!

    First, it’s chicken second it is you that makes that incredible meal. As sure as I never re-cork a bottle of Cabernet, that meal is going to be delicious. I have zero doubt, ever.

    Always a great banquet.  Impressive skills on display.
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    I really should have made more. First time trying this recipe, so I  held back. Will double it next time.

    It sounds like a very similar flavor profile. It is going on our menu for the week. Glad I didn’t get groceries already this morning.

    Thanks! I also have so many bookmarks, from the great cooks here, but not enough time to get to them.

    If it helps, here are the recipes I started with. Made some adjustments along the way. There are tons of Brazilian recipes on the interwebz, but these suited what I had available at home yesterday.

    - doubled the recipe, for 4 quarters.
    - didn't add nearly as much lime juice as the recipe called for.
    - will add lime zest next time.

    - 3 cloves of garlic is laughable.
    - used 1 tomato + 1TBSP tomato paste.
    - small can of coconut milk, instead of a large (14oz) one.
    - ingredients were otherwise adjusted up, to account for the quantity of chix.

    I've lived in Brazil, and unfortunately, in much of the country the cuisine is really fairly bland. This recipe almost certainly is from the northeast, where they understand about spices and seasoning. Great job!

    I was wondering about the origins of this recipe. The last (first) time I did a Brazilian cook, it was picanha with a couple of sides, and didn't quite have these flavors.

    Having a dinner party tonight. Copying your meal and adding picanha and chicken hearts and a wok full of carrots and peppers in a garlic sauce. DH asked for two batches of the cheese bread 😂

    Dinner went nicely with this Malbec, and a dessert of chopped watermelon and lychees (served with a sweet white wine).
