So, I did a thing.

I am doing a brisket for the celebratory newlyweds at our home, for those who could not join us in France where they exchanged vows. 

If you have a daughter you will never be able to retire. 

Anyway, Penzy’s has a beef starter for soups, it is not like most bullion you will find. I chose to use it as a base, smearing the gel/paste on all sides of the brisket, then adding my abnormal rub on all surfaces. 

It should be about a 23 hour cook, so I will be posting the results later. 

Wish me luck, feeding 10, 4 are Texas brisket experts.

    @YukonRon You are selling yourself short my man.  You consistently nail those briskets.  I am confident this will turn out just the same.  
    That's a he!! of a destination wedding.  Congratulations to the newly weds and especially the dad who got to write the big checks.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    I have thought about each option. Burying it may need to happen.  It went in at 16 pounds, giving it approx 1.5 hours/pound…..the cow and the egg will need to battle it out. 

    I will say though, from the SRF briskets recently, purchased, I only trimmed about 4 pounds, which is not typical, when the previous several purchases I had removed almost 33% of the total weight. 

    It was odd to see a 20+ pounder arrive as one of two I ordered in the lower weight category. 

    Hosting about 20 people, at our home for dinner, if it turns out, there will be none left for chili. Bummer.

    Yeah, they are really fine gentlemen, and I have learned so much from them over the years. I trust them far more than I will ever trust me when it comes to smoking brisket.

    It rolled in at 20+ pounds, which I did not order, I ordered a weight substantially less than that. Then our daughter asked us to host a reception, for 22, I pulled that bad boy out of the freezer, and was thankful I kept that second fridge, to thaw. 

    We will see if it ends up in chili. A lot of chili. 

    We also purchased a lot of wine while in France. Maybe I can them drunk enough they will not care. 

    We will see what happens.

    Especially in the dark. 

    The cook does smell good though, my neighbors have complimented frequently on the aroma of beef, Rockwood  and Frutia pecan.

    And all this time you guys thought My Beautiful Wife married me for my dashing good looks, charming wit and personality, and my bank account….well you were wrong. Like, really wrong. So wrong we need a whole new word for wrong, to make how wrong you were to make it make sense. 

    I am sure you are shocked. 

    No she married me, for my meat. No, not that one. And maybe not this brisket, but occasionally I can put together a meal worth having. Occasionally.

    You and me both my friend, this is by far the largest brisket I have ever cooked in my life.

    Thank you. I had to give the toast, it was a very difficult, than 5 minute speech to wish them well and share how much they are loved, without taking a few pauses to gather myself.

    Inconceivable.

    By the way, even though you have a very large brisket there, the chances it will need all of 23 hours to cook are pretty low.  You'll probably end up closer to 12 than 23.  Your challenge is that there is a lot of time in between, so managing the cook and the rest is going to be interesting.  

    Did you say you have some people from Texas coming in?

    I was going to say that this trip you went on needs its own thread. . . but then realized this is your own thread.  What a fantastic trip.  I keep checking for the brisket pictures.  It FEELS like it has been 3 days!

    220°-225° Dome, pulled at 195°, it was jiggly and toothpick test was perfect. 19 hour cook going to let it sit a couple hours before I do anything. Crust is heavenly.

    I set it up and went to sleep about 0130, woke at 0500. I will tell you this, it feels like it.

    Great post! I loved Beune when we were there two years ago biking through the vineyards!
    It is one of two places we are considering in France. We loved the Pyrenees
    But Beaune was equally as appealing. 

    We stayed there 10 years ago, renting an author’s home who wrote travel novels about France. Pretty sweet set up and reasonably priced. We were lucky to get it, as it remains booked out as far as they can, when they are not traveling. 

    They had an orchard and vineyards, White Burgundy and their wine is superior.  Next time you go let me know and I will forward the data if you care to rent. 


    This is the inner city. We stayed inside the walls, a 2 minute walk to everything. Amazing experience if you have not already done it.

    What a trip.  Your daughter's wedding is and will be the envy of everyone she knows.  Wow.  
    You know there is an old saying around here, "I wish I had Ron's money."  Perhaps there's a new Ron's $$ in town (or at least until this adventure...)  =)

    I think that you could have made a major down payment on a house for them for that $$$. Maybe you have quietly passed Ron and Scotty combined though?
